Zucchini Brownies

1. Preheat oven to 350°F (175°C). Grease a 9×13 pan with non-stick spray.
2. Melt chocolate chips and oil in the microwave or over double boiler until smooth. Remove from burner and stir in honey. Set aside to cool slightly.
3. In another large bowl add eggs and vanilla whisking to combine. Stir in grated zucchini.
4. Pour in the cooled chocolate mixture to the zucchini, stirring to combine.
5. Add the flour, cocoa powder, baking soda, and salt. Stir together until just combined.
6. Transfer brownie batter to prepared pan. Bake for 22-25 minutes, or until toothpick comes out clean.
7. Let the brownies cool in the pan before slicing.
