* Kneading by hand:
1. On a large, clean, dry work surface or in a large salad bowl, mix the flour + sugar + salt + powdered milk and form a well.
2. Pour in half the water + the sourdough (liquid or dehydrated) + the crumbled fresh yeast. Mix.
3. Pour in the rest of the water and mix until all the flour is absorbed.
4. Then add the softened butter.
