Vienna Bread (Pain Viennois)

Ingredients for 5 small Viennese baguettes:
– 500 g of T65 wheat flour (I used organic flour that I bought at the supermarket)
– 35 g of powdered sugar
– 10 g of salt (i.e. 2 teaspoons)
– 25 of powdered milk (I used semi-skimmed milk powder)

Vienna Bread

– 225 g of water at 20°C (if you don’t have a kitchen thermometer, just use water stored at room temperature)
– 75 g of liquid sourdough (or 20 g of dehydrated sourdough that you buy in an organic store)
– 15 g of fresh baker’s yeast (this is a small cube that you can find fresh in the bread section of the supermarket)
– 75 g of softened butter
– 1 egg

STEP BY STEP implementation in 15 detailed steps (+ my little personal tips):
* Kneading in a robot equipped with a dough hook:
1. In the mixer bowl, pour the flour + sugar + salt + milk powder + water + sourdough (liquid or dehydrated) + fresh baker’s yeast.
2. Mix for 5 minutes at slow speed (speed 1 on my KitchenAid) then 5 minutes at high speed (speed 3 on my KitchenAid).
