Toffee Squares

Instructions

  • Preheat the oven to 350 degrees.
  • In a mixing bowl, cream together the butter, sugar, egg yolk and vanilla.
  • Beat until light and fluffy.
  • Add in the flour and salt and mix. The dough will look dry and flaky, but continue to mix until it pulls away from the sides of the bowl and starts to form a ball.
  • Transfer to a 13” x 9” x 2” cookie sheet with sides and press into an even layer across the entire bottom of the pan.
  • Place in the oven and bake for 20-25 minutes until lightly golden brown.
  • Remove and immediately sprinkle the chocolate chips evenly across the top.
  • Allow to melt, and spread a layer of chocolate over the entire top.
  • In a small pan, place the pecans over medium heat to roast for about 3 minutes.
  • Once they’ve started to slightly darken, remove from heat and chop into small pieces.
  • Sprinkle over the top of the chocolate.
  • Cut into squares while still warm, then allow to cool for the chocolate to set.
