These Pumpkin Spice Cheesecake Bites are the perfect treat for fall – creamy, spiced, and absolutely irresistible!

Preheat the oven to 325°F (165°C). Line a mini muffin tin with paper liners.
In a small bowl, mix together the graham cracker crumbs and melted butter until well combined.
Press about 1 tablespoon of the crumb mixture into the bottom of each muffin liner to form a crust. Bake for 5 minutes to set the crust, then remove from the oven and set aside.
In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
Add the pumpkin puree, vanilla extract, pumpkin pie spice, and ground cinnamon. Mix until fully incorporated.
Add the eggs one at a time, beating just until blended. Be careful not to overmix.
Spoon the cheesecake batter over the prepared crusts in the muffin tin, filling each about 3/4 full.
Bake for 20-25 minutes, or until the centers are set and the tops are slightly puffed.
Remove the bites from the oven and let them cool to room temperature. Then refrigerate for at least 2 hours before serving.
Top with whipped cream and a sprinkle of cinnamon, if desired.
