- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare Filling: In a mixing bowl, combine the thawed and drained spinach, vegan cream cheese, vegan shredded cheese (if using), minced garlic, onion powder, salt, and pepper. Mix until well combined.
- Roll Out Pastry: Lightly dust a clean surface with flour. Roll out the thawed vegan puff pastry into a large rectangle, about 1/4 inch thick.
- Cut Pastry: Using a sharp knife or pizza cutter, cut the puff pastry into squares, approximately 3×3 inches in size.
- Fill Pastry Squares: Spoon a small amount of the spinach and cream cheese mixture onto the center of each pastry square.
- Fold and Seal: Fold each pastry square over the filling to create a triangle shape. Use a fork to press and seal the edges of the pastry together.
- Bake: Place the filled pastry triangles onto the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and crispy.
- Serve: Remove from the oven and let the spinach puffs cool for a few minutes before serving. Enjoy warm as a delicious appetizer or snack.
