- Preheat oven to 375°F (190°C). Roll out pie crust and press into a 9-inch pie dish. Trim excess crust if needed and flute edges.
- In a medium skillet, heat olive oil over medium heat. Add chopped onion and sauté until softened, about 3-4 minutes.
- Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a large bowl, whisk together ricotta cheese, Parmesan cheese, eggs, milk or half-and-half, salt, pepper, and nutmeg (if using) until smooth.
- Stir in cooked spinach mixture until evenly combined.
- Pour mixture into the prepared pie crust.
- Bake for 35-40 minutes, or until the center is set and the top is lightly golden brown.
- Remove from oven and let cool for 10 minutes before slicing and serving.
