Peanut Butter Stuffed Cookies


Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in 1/2 cup of peanut butter, the egg, and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
In a small bowl, mix together the powdered sugar and 1/2 cup of peanut butter until smooth.
Scoop a tablespoon of cookie dough and flatten it slightly. Place a teaspoon of the peanut butter mixture in the center, then top with another tablespoon of cookie dough, sealing the edges.
Place the stuffed cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are golden brown.
Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes:

For a crunchy twist, add chopped peanuts to the cookie dough.
Store in an airtight container to keep the cookies fresh.
