Mini Jalapeno Popper Egg Rolls Ingredients

m cheese, softened

  • 1 cup shredded cheddar cheese
  • 4 jalapenos, seeded and diced
  • 12 egg roll wrappers
  • 1/2 cup cooked bacon bits
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying

Instructions

Preparation

  1. In a medium bowl, mix together the cheddar and Monterey Jack cheese.
  2. In a separate bowl, combine the cilantro, scallions, cream cheese, jalapenos, garlic powder, salt, and pepper. Mix well.
  3. Lay an egg roll wrapper on a flat surface, with one corner pointing towards you.
  4. Place about 1 tablespoon of the cheese mixture in the center of the wrapper.
  5. Add about 1 tablespoon of the cream cheese mixture on top of the cheese.
  6. Brush the edges of the wrapper with a little water.
  7. Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder. Repeat with the remaining wrappers and filling.
