Mini Jalapeno Popper Egg Rolls Ingredients
m cheese, softened
- 1 cup shredded cheddar cheese
- 4 jalapenos, seeded and diced
- 12 egg roll wrappers
- 1/2 cup cooked bacon bits
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil for frying
Instructions
Preparation
- In a medium bowl, mix together the cheddar and Monterey Jack cheese.
- In a separate bowl, combine the cilantro, scallions, cream cheese, jalapenos, garlic powder, salt, and pepper. Mix well.
- Lay an egg roll wrapper on a flat surface, with one corner pointing towards you.
- Place about 1 tablespoon of the cheese mixture in the center of the wrapper.
- Add about 1 tablespoon of the cream cheese mixture on top of the cheese.
- Brush the edges of the wrapper with a little water.
- Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder. Repeat with the remaining wrappers and filling.
