Prepare the Dough:
In a large bowl, combine warm water, yeast, and sugar. Let it sit for about 5-10 minutes until frothy.
Add the melted butter and salt. Gradually mix in the flour until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes until smooth.
First Rise:
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Preheat the Oven:
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Shape the Pretzel Twists:
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope, about 18 inches long.
Flatten the rope slightly and sprinkle a line of shredded cheddar cheese and chopped jalapeños down the center. Fold the dough over to enclose the filling and roll it back into a rope to seal.
Twist the rope into a pretzel shape and place on the prepared baking sheet.
Baking Soda Bath:
In a large pot, bring 10 cups of water to a boil and add the baking soda. Carefully add each pretzel twist to the boiling water for about 30 seconds. Use a slotted spoon to remove them and place them back on the baking sheet.

Brush each pretzel with the beaten egg and sprinkle with coarse sea salt.
Bake:
