HOMEMADE LEMON COOKIE

Preheat the oven to 180°C (350°F) and prepare a baking sheet with parchment paper or lightly grease it.

In a large bowl, beat the butter and sugar until creamy and smooth.

 

Add the eggs one at a time, beating well after each addition.

Add the lemon zest and lemon juice, mixing well to distribute them evenly.

In another bowl, mix the flour, baking powder and salt.

Gradually add the flour mixture to the butter and egg mixture, mixing until a smooth, homogeneous dough forms.

Form small balls of dough and place them on the baking sheet, leaving space between each one so they don’t stick together when baking.

With the help of a fork, lightly press each ball to flatten it a little and make a pattern on the surface of the cookies.

Bake the cookies in the preheated oven for about 10-12 minutes or until golden brown around the edges.

Remove the cookies from the oven and let them cool on the tray for a few minutes before transferring them to a wire rack to cool completely.

Optionally, you can sprinkle a little icing sugar over the cooled cookies to decorate them before serving.
