Golden Garden Bake

 

    • Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil.
    • Chop the cauliflower and broccoli into bite-sized florets. Boil them in salted water for 5 minutes, then drain.
    • In a skillet, heat olive oil over medium heat. Add onion, carrot, and bell peppers. Sauté until tender.

 

    • Add cherry tomatoes to the skillet and cook until they soften.
    • In a bowl, whisk together eggs, heavy cream, milk, flour, curry powder, salt, and black pepper until smooth.
    • Stir in parsley, dill, cheese, Greek yogurt, and mayonnaise into the egg mixture.

 

      • Combine the cooked vegetables with the egg mixture, then pour everything into the greased baking dish.
      • Bake for 25-30 minutes or until the top is golden brown and the center is set.
