- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the chilled butter cubes to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs.
- Make a well in the center of the mixture and pour in the chilled buttermilk. Stir with a wooden spoon or spatula until just combined. The dough should be shaggy and slightly sticky.
- Turn the dough out onto a lightly floured surface. Gently pat the dough into a rectangle about 1/2-inch thick.
- Fold the dough in half and pat it out again to 1/2-inch thickness. Repeat this folding process two more times.
- Using a floured biscuit cutter or a sharp knife, cut out biscuits. Place them on the prepared baking sheet, making sure they are touching.
- Brush the tops of the biscuits with melted butter.
- Bake for 12-15 minutes, or until the biscuits are golden brown on top and cooked through.
- Remove from the oven and let cool slightly on a wire rack before serving warm.
