Fluffy Butter Buttermilk Biscuits

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Add the chilled butter cubes to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs.
  4. Make a well in the center of the mixture and pour in the chilled buttermilk. Stir with a wooden spoon or spatula until just combined. The dough should be shaggy and slightly sticky.
  5. Turn the dough out onto a lightly floured surface. Gently pat the dough into a rectangle about 1/2-inch thick.
  6. Fold the dough in half and pat it out again to 1/2-inch thickness. Repeat this folding process two more times.
  7. Using a floured biscuit cutter or a sharp knife, cut out biscuits. Place them on the prepared baking sheet, making sure they are touching.
  8. Brush the tops of the biscuits with melted butter.
  9. Bake for 12-15 minutes, or until the biscuits are golden brown on top and cooked through.
  10. Remove from the oven and let cool slightly on a wire rack before serving warm.
