Easy Vegan Chocolate Cake

1/3 cup coconut oil 80ml, or vegan butter
1 cup chocolate 150g, chopped (optional)
1 1/2 tsp vanilla extract

2 cups all-purpose flour 240g, or spelt flour, or sub gluten-free flour*
1/2 cup cocoa powder 50g
1 1/2 cup organic cane sugar* 200g
1 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt

Chocolate Frosting
1 cup non-dairy whipping cream 240ml, or coconut cream*
6 oz dark chocolate I used 70%, 175g, chopped
1 sachet cream stabilizer optional
Toppings (optional)
cherries
blackberries
