Instructions:
Preheat Oven & Prepare Baking Sheets: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Cream Butter & Sugars: In a large bowl, using an electric mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add Eggs & Vanilla: Beat in the eggs, one at a time, followed by the vanilla extract, mixing well after each addition.
Incorporate Dry Ingredients: Gradually add the dry ingredients to the butter mixture, beating until just combined.
Stir in Oats & Mix-Ins: With a spoon or spatula, fold in the oats, chocolate chips, chopped pecans, and shredded coconut until evenly distributed throughout the dough.
Shape Cookies: Drop heaping tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake: Bake for 10-12 minutes, or until the edges are golden brown but the centers are still soft.
Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely
