CHOCOLATE CARAMEL TURTLE CUPCAKES

½ teaspoon Baking soda
½ teaspoon salt
2 large Eggs, room temperature
½ cup Vegetable oil
¾ cup buttermilk, room temperature
2 teaspoon Pure Vanilla Extract
½ cup hot coffee or boiling water

GANACHE:

1 cup dark chocolate chips
½ cup heavy cream

CHOCOLATE CARAMEL CREAM CHEESE FROSTING:

1 cup unsalted butter, room temperature
1 (8 ounce) package cream cheese, softened to room temperature
½ cup hi-ratio shortening (or regular vegetable shortening)
7 cups powdered sugar
½ cup unsweetened cocoa powder
½ cup Salted Caramel Sauce, cooled completely

GARNISH:

Extra Salted Caramel Sauce
8-10 Turtle Chocolates, cut in half
1 cup chopped pecans
