INGREDIENTS
Crust
▢2 1/2 cups (250 g) speculoos cookies
▢1/2 cup (100 g) unsalted butter, melted
Stewed Blueberries
▢1 1/2 cups (300 g) blueberries fresh or frozen
▢2 tbsp brown sugar
▢1 lime zested and juiced
Cheesecake
▢2 blocks (500 g) cream cheese softened
▢1 cup (200 g) white chocolate melted
▢1 cup (250 ml) heavy cream
▢1/2 cup (150 g) mascarpone
▢1 lime zested and juiced
▢1 tsp vanilla extract
