A soft and moist sponge cake with layers of apple butter and cream cheese frosting.
Ingredients
Sponge Cake:
- 4 eggs
- 3/4 cup granulated sugar
- 1 cup ml all purpose flour
- 1/2 cup potato starch corn starch
- 1 tbsp baking powder
- 7 Tbsp unsalted butter melted, brought to room temperature
- 1/2 cup mini chocolate chips bittersweet (optional)
Apple Butter:
- 8 medium sized apples peeled, cored, chopped to about 1 inch pieces
- 3/4 cup granulated sugar
- Juice of 1/2 lemon
- 1 tsp vanilla extract
Cream Cheese Frosting
- 8 oz cream cheese
- 3/4 cup heavy cream
- 1/2 cup sugar
- 1 Tbsp fresh lemon juice
- 1 tsp vanilla extract
To soak combine ingredients together –
- 1/2 cup apple juice
- 1 tsp vanilla extract
Chocolate Drizzle
