Apple Butter Cake with Cream Cheese Frosting

A soft and moist sponge cake with layers of apple butter and cream cheese frosting.

Ingredients

Sponge Cake:

  • 4 eggs
  • 3/4 cup granulated sugar
  • 1 cup ml all purpose flour
  • 1/2 cup potato starch corn starch
  • 1 tbsp baking powder
  • 7 Tbsp unsalted butter melted, brought to room temperature
  • 1/2 cup mini chocolate chips bittersweet (optional)

Apple Butter:

  • 8 medium sized apples peeled, cored, chopped to about 1 inch pieces
  • 3/4 cup granulated sugar
  • Juice of 1/2 lemon
  • 1 tsp vanilla extract

Cream Cheese Frosting

  • 8 oz cream cheese
  • 3/4 cup heavy cream
  • 1/2 cup sugar
  • 1 Tbsp fresh lemon juice
  • 1 tsp vanilla extract

To soak combine ingredients together –

  • 1/2 cup apple juice
  • 1 tsp vanilla extract

Chocolate Drizzle

    • 1/4 semi-sweet chocolate
    • 3 Tbsp heavy cream boiling hot
