Here’s a recipe for Banh Mi Meatballs—a delicious twist on the classic Vietnamese Banh Mi sandwich. These meatballs capture the flavors of the traditional Banh Mi but can be served as an easy meal or appetizer.
Ingredients:
For the Meatballs:
1 pound ground pork
1/2 cup breadcrumbs (preferably panko for extra crunch)
1/4 cup finely chopped cilantro
1/4 cup finely chopped green onions
2 cloves garlic, minced
1 tablespoon soy sauce
1 tablespoon fish sauce
1 tablespoon sugar
1 large egg
Salt and pepper to taste
For the Pickled Vegetables:
1 cup shredded carrots
1 cup thinly sliced daikon radish (or substitute with additional carrots)
1/2 cup rice vinegar
1/4 cup water
2 tablespoons sugar
1/2 teaspoon salt
For the Sauce:
1/4 cup mayonnaise
1 tablespoon sriracha (adjust for spice level)
1 tablespoon lime juice
