Cinnamon Roll Biscuits

Ingredients

For the Biscuit Dough
200g Softened Unsalted Butter
100g Caster Sugar
250-275g Plain Flour (plus extra for rolling)
1 Large Egg Yolk
For the Filling
20g Unsalted Butter – Melted
30g Caster Sugar
2 teaspoons Ground Cinnamon
For the Icing
125g icing sugar
25ml Milk (I used Semi-Skimmed, but any will do!)
1/2 teaspoon Vanilla Extract (Optional)

Method

Make the biscuit dough: Sieve the plain flour in to a bowl aside. Using an electric hand or stand mixer, beat the butter until smooth and pale. Add in the caster sugar and mix until pale and fluffy. Mix in the egg yolk, then add flour and mix until dough formed.
