Ingredients:
For the Cake:
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup shredded coconut (sweetened or unsweetened)
1/2 cup unsalted butter, softened
2 large eggs
1/2 cup orange juice (freshly squeezed for best flavor)
1 tbsp orange zest (from about 1 orange)
1 1/2 tsp baking powder
1/4 tsp salt
1/4 cup milk
1 tsp vanilla extract

1/2 cup powdered sugar
2 tbsp fresh orange juice
2 tbsp coconut milk (or regular milk)
1/4 cup shredded coconut (for garnish)

Instructions:
Prepare the Cake
Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or a loaf pan.
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy (about 3-4 minutes).
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, combine the flour, baking powder, salt, and shredded coconut.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk and orange juice. Begin and end with the dry ingredients.
