Elote is a traditional street food in Mexico. In America, it is typically called Mexican street corn. It is corn on the cob charred on an open grill and smothered in cheese, a cream sauce, and chipotle seasoning.
INGREDIENTS
- 6 ears corn husked and all silk removed
- olive oil
- 2 tsp chipotle chili powder
- ¼ – ⅓ cup cotija cheese crumbled
- ¼ cup fresh parsley finely chopped
- sea salt
- 2 limes juiced
MEXICAN CREAM SAUCE (CREMA):
- 1 cup heavy cream
- 2 tbsp sour cream
- 1 lime juiced
- ¼ tsp chipotle chili powder
- ¼ tsp salt
