Ingredients
1 lb flank steak
2 bell peppers (any color), sliced
1 onion, sliced
2 tablespoons olive oil
2 teaspoons chili powder
1 teaspoon cumin
Salt and pepper to taste
Flour or corn tortillas
Lime wedges
Fresh cilantro (optional)
Directions
1. Pour the olive oil into a large skillet and set it over medium-high heat, letting it get nice and hot.
2. While the pan heats, season both sides of your flank steak generously with chili powder, cumin, salt, and pepper.
3. Lay the steak in the skillet and sear for about 5 to 7 minutes per side, or until it’s cooked just how you like it.
4. Once the steak is done, transfer it to a plate and let it rest for a few minutes—this keeps it juicy. Then slice it thinly against the grain.
5. In the same skillet, toss in the sliced bell peppers and onion. Sauté until they’re softened, about 3 to 4 minutes, scraping up any flavorful bits left from the steak.
6. Warm your tortillas, then fill them with the sliced steak and sautéed veggies.
7. Finish everything off with a squeeze of lime and a sprinkle of fresh cilantro if you like. Serve right away and enjoy every bite!
