Shrimp Cobb Salad

Ingredients

8 oz shrimp, cooked and peeled

4 cups mixed salad greens

1 avocado, diced

2 hard-boiled eggs, chopped

1 cup cherry tomatoes, halved

1/2 cup blue cheese, crumbled

1/2 cup bacon, cooked and crumbled

1/4 cup red onion, thinly sliced

1/4 cup ranch dressing

Salt and pepper to taste

Directions

1. Gather a large bowl and add in the mixed salad greens, shrimp, avocado, hard-boiled eggs, cherry tomatoes, blue cheese, bacon, and red onion.

2. Drizzle everything with the ranch dressing, then toss gently, making sure all those bright, fresh ingredients get a good coating.

3. Sprinkle with salt and pepper to your liking.

4. Serve right away and enjoy every delicious bite.
