This chocolate mint Andes cake taste just like mint chocolate chip ice cream. This is a soft layered chocolate cake filled with Andes mints and topped with mint chocolate chip frosting.

Chocolate Cake
- 2 ½ cups All-purpose flour
- 1 cup Dutch process cocoa powder
- 1 ¾ cup White granulated sugar
- 2 ½ teaspoon Baking powder
- 1 ½ teaspoon Baking soda
- 1 teaspoon Salt
- ¾ cup Oil canola or vegetable
- 2 teaspoon Pure vanilla extract
- 4 Large eggs room temperature
- 1 ¼ cup Buttermilk room temperature
- 1 cup Hot water
