– 2 cups leftover mashed potatoes

1/4 cup all-purpose flour

– 1/4 cup grated cheese (optional)

– 1/4 cup chopped green onions

– 1 egg

– Salt and pepper to taste

– Oil for frying

Directions:

In a cozy corner of your kitchen, gather those leftover mashed potatoes and mix them with flour, grated cheese if you’re feeling indulgent, green onions, and a freshly cracked egg. Sprinkle in a bit of salt and pepper to your liking. Heat up some oil in a skillet over medium heat, letting it get nice and warm. Gently drop spoonfuls of your mixture into the skillet, pressing them down with a spatula to form lovely little pancakes. Let them sizzle away, turning golden brown and crispy, about 3 to 4 minutes on each side. Once they’re perfectly cooked, transfer them to paper towels to drain any excess oil. Serve them up warm and enjoy!
