Ingredients:

– 4 boneless, skinless chicken breasts

– 1 cup pineapple chunks (fresh or canned)

– 1 red bell pepper, sliced

– 1 yellow onion, sliced

– 2 tablespoons olive oil

– 2 tablespoons soy sauce

– 1 tablespoon honey

– 1 teaspoon garlic powder

– 1/2 teaspoon ground ginger

– Salt and pepper to taste

– Fresh cilantro for garnish

Directions:

First, get your oven nice and hot by preheating it to 400°F (200°C). Lay those juicy chicken breasts on a baking sheet that’s been lined with parchment paper to make clean-up a breeze. In a small bowl, whisk together olive oil, soy sauce, honey, garlic powder, ginger, salt, and a good pinch of pepper. This is your flavorful marinade! Pour it all over the chicken, making sure every piece is well-coated. Nestle the pineapple, red bell pepper, and onion slices around the chicken, adding a splash of color and sweetness. Pop the tray in the oven and let it roast for about 20-25 minutes, or until the chicken is cooked just right and juicy, reaching an internal temperature of 165°F (74°C).
