Ingredients:
– 2 boneless, skinless chicken breasts
– 1 cup grated Parmesan cheese
– 1/2 cup breadcrumbs
– 2 tablespoons olive oil
– 3 cloves of garlic, minced
– 1 cup heavy cream
– 1/2 cup chicken broth
– 2 cups cooked penne pasta
– Salt and pepper to taste
– Fresh basil for garnish
Directions:
Preheat your oven to 400°F (200°C). On a plate, mix together the Parmesan cheese and breadcrumbs. Take each chicken breast and lovingly coat it in this cheesy mixture. Heat up some olive oil in a skillet over medium-high heat. Place the chicken in the skillet, letting it cook until it’s beautifully golden on both sides, about 4 minutes per side. Once they’re ready, transfer them to a baking dish and pop them in the oven for about 15-20 minutes, or until they’re cooked through.
While the chicken is in the oven, heat the same skillet. Add the minced garlic and sauté it for just about a minute until it smells heavenly. Pour in the chicken broth and heavy cream, letting it all simmer together for about 5 minutes, stirring occasionally. Add the cooked penne pasta into the skillet, giving it a good toss to coat it well in the creamy sauce. Season with salt and pepper to your liking.
Now, slice up the crispy Parmesan-crusted chicken and lay it lovingly on top of the creamy pasta. Finish off with a sprinkle of fresh basil on top for that extra pop of freshness. Enjoy every delicious bite!
