One Pot Mexican Rice Casserole

Ingredients:

– 1 cup rice

– 1 can black beans, drained and rinsed

– 1 can corn, drained

– 1 can diced tomatoes

– 1 cup chicken or vegetable broth

– 1 cup shredded cheese

– 1 tablespoon taco seasoning

– 1 onion, chopped

– 1 bell pepper, chopped

– Salt and pepper to taste

– Cilantro for garnish (optional)

Directions:

1. Let’s start by heating a bit of oil in a large pot over medium heat. Toss in the chopped onion and bell pepper, letting them cook until they’re nice and soft.

2. Now, stir in the rice, black beans, corn, diced tomatoes, broth, and taco seasoning. Give it all a good mix.

3. Bring this mixture to a boil, then reduce the heat, cover, and let it simmer for about 20 minutes — you want the rice to be perfectly cooked.

4. Once the rice is done, stir in the cheese until it’s all melted and beautifully combined.

5. Go ahead and add salt and pepper to suit your taste.

6. Serve it warm, and if you’re in the mood, sprinkle some cilantro on top for a fresh finish. Enjoy!
