Ingredients:
– 9-12 lasagna noodles
– 1 packet taco seasoning
– 2 cups salsa
– 1 can black beans, drained and rinsed
– 2 cups corn, frozen or canned
– 2 cups shredded cheese (cheddar or Mexican blend)
– 1 cup sour cream
– Chopped green onions and cilantro for garnish
Directions:
1. Preheat your oven to 350°F (175°C).
2. Cook the lasagna noodles according to package instructions and set aside.
3. In a skillet, brown the ground beef over medium heat and drain the excess fat.
4. Stir in the taco seasoning, salsa, black beans, and corn. Cook for a few minutes until everything is heated through.
5. In a baking dish, spread a layer of the meat mixture, followed by a layer of lasagna noodles.
6. Spread a layer of sour cream over the noodles, then add a sprinkle of cheese.
7. Repeat the layers until all the ingredients are used, finishing with cheese on top.
8. Cover the dish with foil and bake for 25 minutes.
9. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly.
10. Let the lasagna cool slightly before serving, and garnish with chopped green onions and cilantro.
