1 chopped onion
1 chopped red bell pepper
1 chopped green bell pepper
1 can Rotel
Salt to taste
Pepper to taste
Cumin to taste
Shredded cheese (for mixing in)
Additional shredded sharp cheddar cheese (for topping)
Directions:
Prepare the Rice a Roni Spanish rice according to the instructions on the box. In a large skillet, brown the ground beef together with the chopped onions and bell peppers. Once that’s done, toss in a sprinkle of shredded cheese, the can of Rotel, and season with salt, pepper, and cumin to your liking. Stir everything together thoroughly. Now, mix this beef mixture with the cooked rice. Pour the mixture into a baking dish, spread it evenly, and then top with some extra shredded sharp cheddar cheese. Bake everything in the oven at 350°F for 25 to 30 minutes. Enjoy your meal!
