Directions:

1. Preheat the oven to 425°F (220°C).

2. Wash and peel the sweet potatoes, then cut them into cubes.

3. Toss the sweet potato cubes with olive oil, salt, and pepper in a bowl.

4. Spread the sweet potatoes on a baking sheet in a single layer.

5. Roast in the preheated oven for about 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.

6. Optionally, add toppings like cinnamon, butter, or brown sugar before serving.
