Ingredients:

2 cups mashed potatoes

1/4 cup flour

1 egg

Salt

Pepper

Canola oil

Butter

Directions:

In a mixing bowl, combine the mashed potatoes, flour, egg, salt, and pepper. Heat a pan over medium heat and add canola oil and a bit of butter. Form the potato mixture into cakes and fry them until they are golden brown on both sides. Drain the cakes on a paper towel and sprinkle with salt immediately. Serve them warm.
