2 1/2 cups shredded coconut

1 cup sweetened condensed milk

1/2 tsp vanilla extract

1 cup powdered sugar

1/2 cup chopped nuts (optional)

8 oz white chocolate or semi-sweet chocolate, melted

Directions:

Start by grabbing a large mixing bowl and combine the shredded coconut, sweetened condensed milk, vanilla extract, and powdered sugar. If you’re feeling like adding a bit of crunch, fold in the chopped nuts. Mix everything until you get a thick, sticky dough. Roll this mixture into small balls and arrange them on a baking sheet lined with parchment paper. Pop them into the freezer for about 30 minutes to let them set up nicely. Next, melt your choice of white or semi-sweet chocolate in a microwave-safe bowl, using 30-second bursts and stirring each time until it’s smooth. Now for the fun part — using a fork or a toothpick, dip the frozen balls into the melted chocolate to coat them completely. Place them back on the parchment-lined baking sheet.
