Creamy Spinach & Mushroom Lasagna

Ingredients:

– 2 tablespoons olive oil

– 1 large onion, finely chopped

– 3 cloves garlic, minced

– 10 ounces mushrooms, sliced

– 10 ounces fresh spinach leaves

– 2 cups ricotta cheese

Directions:

1. Start by preheating your oven to 375°F (190°C).

2. In a large skillet over medium heat, add the olive oil. Toss in the onion and garlic, and sauté until they are soft.

3. Throw in the mushrooms and cook them until they turn brown. Then, mix in the spinach and cook until wilted.

4. In a large bowl, combine the cooked vegetables with the ricotta cheese.

5. In a lasagna dish, start layering the vegetable-ricotta mixture with lasagna noodles.

6. Bake everything for 30 to 40 minutes until the top is bubbly and golden. Allow it to cool slightly before serving it up.
