Ingredients:
– 1 pound chicken breast, cut into bite-sized pieces
– 2 eggs, beaten

– 1 cup sweet and sour sauce
– 1 cup bell peppers, chopped
– 1 cup pineapple chunks
Directions:
1. Preheat your oven to 375°F (190°C).
2. Dredge the chicken pieces in cornstarch to ensure they are fully coated.
3. Dip the coated chicken pieces in the beaten eggs.
4. Heat the vegetable oil in a skillet over medium heat. Fry the chicken pieces until golden brown, about 4-5 minutes.
5. Transfer the fried chicken to a baking dish.
6. Pour sweet and sour sauce over the chicken, then add chopped bell peppers and pineapple chunks.
7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the sauce is bubbly.
8. Serve hot over rice or noodles.
