Ingredients:

– 2 boneless, skinless chicken breasts

1/2 cup grated Parmesan cheese

– 1/2 cup breadcrumbs

– 1 tablespoon dried parsley

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– Salt and pepper to taste

– 1/4 cup olive oil

– 1/4 cup grated mozzarella cheese

– 1/4 cup marinara sauce (optional)

Directions:

Start by preheating your oven to 375°F (190°C) and lightly grease a baking sheet. In a shallow bowl, combine the Parmesan cheese, breadcrumbs, parsley, garlic powder, onion powder, salt, and pepper. Take your chicken breasts and coat them in the breadcrumb mixture, pressing gently to help the coating stick. Heat the olive oil in a skillet over medium heat and brown the chicken breasts for about 3-4 minutes on each side until they are golden. Once browned, move the chicken to the prepared baking sheet and sprinkle the mozzarella cheese on top. Bake in the oven for 10-12 minutes, or until the chicken reaches an internal temperature of 165°F (75°C). If you like, you can serve it with marinara sauce on top.
