Ingredients:
– 1 lb ground beef
– 1 egg
– 1 onion, finely chopped
– 1 packet French onion soup mix
– 1/2 cup milk
– 1 cup Swiss cheese, shredded
– Salt and pepper to taste
– 2 tbsp olive oil
– Fresh parsley for garnish
Directions:
Start by heating some olive oil in a pan over medium heat. Add the chopped onion and sauté it until it turns golden brown, which should take about 5 to 7 minutes. Once done, set the onions aside. In a good-sized bowl, mix together the ground beef, breadcrumbs, egg, French onion soup mix, milk, salt, and pepper until everything is nicely combined. Shape this mixture into a loaf.
Place the loaf into your Crockpot, then spoon the sautéed onions over the top. Cover the Crockpot and cook the meatloaf on low for 6 to 7 hours, or if you’re short on time, cook it on high for 3 to 4 hours. You’ll know it’s done when it’s fully cooked through.
About 10 minutes before you’re ready to serve, sprinkle the shredded Swiss cheese over the meatloaf to let it melt deliciously. Finish it off by garnishing with some fresh parsley. This meatloaf goes great with mashed potatoes or your favorite vegetables. Enjoy your meal!
