Ingredients
1 pound shrimp, peeled and deveined
2 tablespoons Cajun seasoning
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup green onions, chopped
2 tablespoons olive oil
Salt and pepper to taste
Directions
1. Preheat your oven to 400°F (200°C). Scrub your potatoes clean, poke a few holes in each with a fork, and pop them right on the oven rack. Let them bake for 45-60 minutes, or until they’re perfectly tender when you squeeze them gently.
2. While your potatoes are baking, heat the olive oil in a large skillet over medium heat. Toss the shrimp with the Cajun seasoning, then add them to the hot pan. Cook for about 3-5 minutes, stirring occasionally, until the shrimp are bright pink and cooked through.
3. When the potatoes are ready, carefully cut them open lengthwise and use a fork to fluff up the insides a bit.
4. Now for the fun part: top each potato generously with the Cajun shrimp, a dollop of sour cream, a sprinkle of shredded cheddar, and a good handful of chopped green onions.
5. Finish with a pinch of salt and pepper to your liking. Serve these mouthwatering potatoes warm and enjoy every spicy, creamy bite!
