Taco Stuffed Shells

Ingredients

24 jumbo pasta shells

1 pound ground beef (or turkey)

1 packet taco seasoning

1 cup salsa

1 cup shredded cheese (cheddar or Mexican blend)

1 can black beans, rinsed and drained

1 cup corn (optional)

Sour cream, for serving

Chopped green onions, for garnish

Directions

1. Preheat your oven to 350°F (175°C) and let it start warming up while you prepare everything else.

2. Cook the jumbo pasta shells just like the package says. Drain them gently and set aside so they’re ready for stuffing.

3. In a large skillet over medium heat, brown the ground beef (or turkey). Once it’s fully cooked, drain any extra fat.

4. Sprinkle in the taco seasoning, then stir in the salsa, black beans, and corn if you’re using it. Let this mixture cook together for about 5 minutes so all the flavors meld.

5. Grab each cooked shell and spoon in some of the hearty taco filling. Line up the stuffed shells side by side in a baking dish.

6. Sprinkle all that wonderful shredded cheese right over the top.

7. Bake in the oven for 20 to 25 minutes, until everything is hot and bubbly and the cheese is nicely melted.

8. Serve these cozy shells with dollops of sour cream and a sprinkle of green onions for a touch of freshness.
