{White Chocolate Cheesecake with Amaretto Caramel Sauce}

After a chocolate mousse cheesecake, double chocolate cheesecake and coffee cheesecake, here is a new cheesecake recipe – white chocolate cheesecake with amaretto caramel sauce. A creamy white chocolate cheesecake with a boozy caramel sauce – so delicious and rich! What I love about cheesecakes it’s their versatility. You can make them usijg fruits, chocolate, nuts, dried fruits, pretty much anything your heart desires, knowing that you will have a delicious dessert every single time. In addition to these, they are easy to make, you don’t need to be an expert in the kitchen to enjoy a slice of cheesecake!

For this particular recipe I chose the delicate white chocolate, but if that was not enough, I paired with with a silky caramel sauce, flavored with Amaretto. It’s decadence in every bite!

INGREDIENTE

Crust:

  • 150 g graham crackers
  • 20 g almonds
  • 60 g butter (melted)

Filling:

  • 150 ml heavy cream
  • 100 g white chocolate (chopped)
  • 700 g cream cheese
  • 100 g sugar
  • Seeds from 1 vanilla pod
  • 4 eggs
  • 1 pinch salt
  • 1 tablespoon cornstarch

Amaretto caramel sauce:

  • 200 g sugar
  • 20 g glucose
  • 50 ml water
  • 300 ml heavy cream (heated)
  • 1 pinch salt
  • 1/4 cup Amaretto
