- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup chopped spinach or kale
- 1 cup chopped mushrooms
- 1 cup cherry tomatoes, halved
- 6 large eggs
- 1 cup milk (you can use whole milk, almond milk, or any milk of your choice)
- 1 cup shredded cheese (cheddar, Swiss, or your favorite cheese)
- Salt and pepper to taste
- Optional: fresh herbs like parsley or thyme for garnish
