Baked Cottage Cheese Eggs

Ingredients:

  • 6 large eggs
  • Approximately 450 grams (about 2 cups) of cottage cheese
  • 1 cup of grated mild Cheddar cheese, or around 100 grams
  • 1/4 cup of grated Parmesan cheese
  • 1/4 cup of all-purpose flour, or around 30 grams
  • 2 tablespoons of melted butter (about 30 milliliters)
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1/4 cup of chopped green onions
  • Fresh parsley, chopped, for garnish
  • Optional garnish: red pepper flakes
