2 cups all-purpose flour
1 cup granulated sugar
1/2 cup brown sugar
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup unsalted butter, melted
1 cup buttermilk
2 large eggs
2 cups diced apples
1 teaspoon vanilla extract
Powdered sugar for dusting
Directions

1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
3. In a separate bowl, blend the melted butter, buttermilk, eggs, and vanilla extract until everything is nice and combined.
4. Gently pour the wet mixture into the dry ingredients and stir until just combined—don’t overmix. Fold in the diced apples so they’re spread throughout the batter.
5. Pour the batter into your prepared pan and smooth it out so it’s even.
6. Slide the pan into the oven and bake for 35–40 minutes, or until a toothpick poked into the center comes out clean.
7. Let the cake cool completely, then give it a generous dusting of powdered sugar before serving. Enjoy!
