Ingredients
1 whole chicken (3-4 pounds)
2 tablespoons olive oil
1 tablespoon salt
1 teaspoon black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon cayenne pepper (optional)
Directions
Rub your whole chicken all over with olive oil, making sure to get every nook and cranny nice and coated.
In a small bowl, stir together the salt, pepper, garlic powder, onion powder, paprika, thyme, rosemary, and cayenne pepper if you’d like a bit of heat.
Sprinkle the spice mix all over the chicken and rub it in well. Don’t forget under the wings and on the inside, too—it’s the secret to deep, delicious flavor.
Place the seasoned chicken into your slow cooker, breast side up.
Cover and cook on low heat for 6-8 hours or on high for 4-5 hours. You’ll know the chicken is ready when the thickest part hits 165°F (75°C) on a meat thermometer.
Let your chicken rest for just a few minutes once it’s done. Then carve it up to serve as a lovely main dish, or shred the meat for sandwiches, salads, or any recipe you like.
