Ingredients
1 cup peaches (fresh or canned, diced)
1/2 cup sugar
1 tsp vanilla extract
1 tsp cinnamon
1 package eggroll wrappers
Oil for frying
Powdered sugar for dusting
Directions
1. In a medium bowl, mix together the cream cheese, sugar, vanilla extract, and cinnamon until you have a lovely smooth mixture.
2. Gently fold in the diced peaches so every bite has a pop of fresh flavor.
3. Place an eggroll wrapper on a clean surface and spoon a generous dollop of your peach mixture right into the center.
4. Fold in the sides and roll it up tightly, sealing the edges with a bit of water to keep everything snug inside.
5. Warm up your oil in a deep pan over medium heat—it should be hot but not smoking.
6. Fry your eggrolls in batches, turning so they’re golden brown and crisp on every side, usually about 2 to 3 minutes per side.
7. Once they’re beautifully cooked, let them rest on paper towels to drain. Give them a good dusting of powdered sugar while they’re still a little warm, then serve and enjoy every delicious bite.
