Ingredients
1 can of black beans, drained and rinsed
1 can of corn, drained
1 packet of taco seasoning
1 cup salsa
2 cups tortilla chips, crushed
2 cups shredded cheese (cheddar or Mexican blend)
1 cup sour cream
Chopped green onions and cilantro for garnish
Directions
Preheat your oven to 350°F (175°C) so it’s ready to go.
In a large skillet, brown the ground beef over medium heat. Once it’s cooked through, drain off any excess fat.
Add the black beans, corn, taco seasoning, and salsa to the beef. Give it all a good stir and let it cook until everything is nice and hot.
Grab a baking dish and start layering. Spread half of the crushed tortilla chips on the bottom, then add a layer of the beef mixture, and sprinkle a generous handful of cheese over the top.
Repeat with the remaining chips, the rest of the beef mixture, and finish with the rest of the cheese on top.
Slide the dish into the oven and bake for 20-25 minutes, until the cheese is melted and bubbly with a hint of golden color.
Spoon out generous portions and top each serving with a dollop of sour cream. Sprinkle with chopped green onions and cilantro for a fresh finish. Enjoy every warm, cheesy bite!
