Ingredients
1 pound crab meat
1 pound shrimp, peeled and deveined
4 cups seafood stock
1 cup heavy cream
1/2 cup white wine
1 onion, finely chopped
2 cloves garlic, minced
2 tablespoons tomato paste
2 tablespoons butter
Salt and pepper to taste
Fresh parsley for garnish
Directions
1. Begin by melting the butter in a large pot over medium heat. Add your chopped onion and garlic, and let them cook until they turn soft and fragrant.
2. Stir in the tomato paste and give it about a minute to toast and blend with the onions and garlic.
3. Pour in the white wine, making sure to scrape up any of those flavorful bits from the bottom of the pot. Let the wine simmer for 2-3 minutes.
4. Add the seafood stock, bring everything to a boil, then lower the heat and let it all simmer gently for about 10 minutes.
5. Now, add the crab meat and shrimp. Let them cook just until the shrimp turns pink and everything is heated through.
6. Stir in the heavy cream and season the bisque with salt and pepper to your liking.
7. Let the soup simmer on low for another 5 minutes, allowing all the flavors to meld together.
