1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1/2 cup mashed ripe bananas (about 1 large banana)
1 cup old-fashioned rolled oats
1/2 cup chopped walnuts (optional)
1/2 cup chocolate chips (optional)
Directions
Start by preheating your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set this bowl aside.
In a larger bowl, beat the softened butter with both sugars until the mixture turns light and fluffy. Add in the egg, vanilla extract, and mashed banana, mixing until everything blends together nicely.
Gradually add in your dry mixture, stirring until it’s just combined—don’t overmix! Fold in the oats, and if you’re feeling extra cozy, toss in some walnuts and chocolate chips.
Drop heaping tablespoonfuls of dough onto your prepared baking sheet, leaving about 2 inches between each one. Slide them into the oven and bake for 10-12 minutes, until the edges are beautifully golden.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack. Grab a cookie (or two!) and enjoy the comforting taste of banana bread in every bite.
