One Pot Smoked Sausage Pasta

Ingredients:

– 12 oz pasta (penne or rotini)

– 1 lb smoked sausage, sliced

– 1 onion, diced

– 3 cloves garlic, minced

– 1 bell pepper, diced

– 1 can (14.5 oz) diced tomatoes

– 4 cups chicken broth

– 2 cups spinach (optional)

– 1 tsp Italian seasoning

– Salt and pepper to taste

– Parmesan cheese for serving

Directions:

1. Start by heating up a large pot and sautéing those delicious slices of smoked sausage over medium heat until they’re nice and browned.

2. Toss in the diced onion, minced garlic, and diced bell pepper. Let them cook until everything’s softened and smelling amazing.

3. Now, it’s time to stir in the pasta, the juicy diced tomatoes, and pour in the chicken broth. Sprinkle in the Italian seasoning and season it all with some salt and pepper.

4. Bring everything to a boil, then lower the heat and let it simmer away for 10-12 minutes until the pasta is beautifully cooked.

5. If you’re feeling a bit green, stir in the spinach until it wilts perfectly into the mix.

6. Serve it up hot with generous sprinkles of grated Parmesan cheese on top. Enjoy every bite!
